Lactose, which is found in milk at a high rate in nature and known as milk sugar, is a source of energy. It is a disaccharide composed of one molecule of glucose and one molecule of galactose. It is obtained by purifying the lactose obtained from pasteurized whey.
Whey is the leftover water that accumulates at the bottom of the buckets during cheese production. In some countries the beverage is consumed as whey protein. In the food industry, it is used as an additive in powder form to increase the protein value of foods.
